Some yummy noodles in Buon Ma Thuot, the coffee capital of Vietnam. Bún Đỏ aka Buon Ma Thuot Red Noodles is a soupy rice noodle (bún) dish where the noodles are tinted and orangey red from being soaked with annatto seeds. The clear pork bone broth, was sweet and delicious. The noodles were soft but retained a nice bite. The minced meat and sliced pork were juicy and had good flavour. Only wished the soup was kept piping hot as the weather in Buon Ma Thuot is quite chilly (19 degrees with a “feels like” of 16). Instead, it chills fairly quick in the cool night. Perhaps the dish needs to be served in a metal bowl with some naphthalene flame below. 😊 #whiskydev #noodles #buonmathuot #vietnamesefood #vietnam

Iconic Buon Ma Thuot red noodle, really a must try. I always opt for the beef version but pork also looks delicious. Amazing service and the flavors are out of this world.

The soup is really sweet. The sweetness is not coming from sugar, MSG or seasoning powder, instead it is the bone stew soup. The soup is a little bit red, as well as the colour of the noodle. The redness of the noodle, explained by the owner of the shop, comes from the cashew oil. The noodle is not sticky but it is easy to be broken. The noodle slice is similar to "banh canh". The mixture of meat ball, knuckle and minced meat are really nice. The owner of the shop stated that his mother whose name is Thu started the business years ago on the pavement of Phan Dinh Giot street. Later on they opened 2 big noodle shops on Dinh Tien Hoang street. Many people tried to mimic the brand name "Bún đỏ cô Thu", however, the owner of the shop claimed that he has the licence for his special noodle red soup. The service here is generally good. No much waiting time while the shop are crowded.

The owner was so friendly! He greeted us right away when we arrived and invited us to sit. The broth was delicious, we ate it until there was nothing left. And right beside we ordered pineapple juice. It was very fresh and not too sweet.

Bun Do tastes so good. The pork is chewy with nice and smooth rice noodles texture. Please note that the broth might be a little bit too salty.
