    My fav is definitely the Sun Down cocktail 🍹✨ It’s such an easy-to-enjoy drink — refreshing, balanced, and the kind of cocktail that makes you want to stay a little longer. I really like this place for a small group of around 4–6 people since they have these super comfy sofa seats that are perfect for a chill catch-up. The view is also a big plus — sitting there with Notre-Dame Cathedral Basilica of Saigon in the background gives the whole place such a nice city evening vibe. Music playing in the night we visited is actually not matching the whole vibe there. Improving in that one will be better tho

    I had an amazing experience at Hybrid Saigon. Tucked away on the third floor above Bar 57, this spot has a beautiful interior design that immediately stands out. The size and layout reminded me of a classic NYC-style cocktail bar. Hybrid presented as slightly dim lighting, intimate space, stylish, and thoughtfully arranged. In addition to the bar seating, there’s also a comfortable area that can accommodate a small group of around 4–6 people. The drinks here were exceptional. I started off with four of their milk punches, and each one was unique and delicious in its own way. Behind the bar, the team worked efficiently and with precision, even during a small rush. You could really appreciate the bartenders technique and attention to detail. What made the experience even better was the level of service. One of the staff members took the time to walk me through the cocktails and what to expect from each one. He was incredibly informative, and it was obvious he takes a lot of pride in his work. This was easily one of my favorite cocktail experiences in Saigon. I’m already looking forward to coming back on my next trip and will definitely be recommending this spot to friends and family.

    You have to walk through Bar 57 to get to Hybrid. Oysters were the highlight for me, but the drinks were really equally amazing too. Beautiful views as well! Highly recommended and will definitely be back. Remember to sit at the bar and chat with the bartenders 🤫 Super friendly bunch, loved our time here.

    Excellent service and great atmosphere, drinks were experimental and interesting, service was attentive and keen to give the right advice and guide us through. Location is a destination experience. Passionate, cool and friendly unfussy staff, exactly what a modern speakeasy cocktail bar should be. Highly recommend.

    Hybrid is a creative cocktail bar that was first started in the coastal city of Nha Trang. The Saigon location opened recently and is near the historic Central Post Office. We had made a reservation through their Facebook site via Messenger. This seems to be the only way to make a reservation. They asked us to reserve a specific time and day. You first enter an alley that leads to Bar 57. It was colorful and lively, but empty at the time we walked through it. At the back of the bar, there’s another door that opens to a staircase that leads up to Hybrid. The narrow space is brightly lit, with lounge chairs and a view of Saigon at the back. I started off with the Black Tomato. It was delightful, with the profile of a mojito and was topped with mint and a chocolate-covered cherry tomato. I thought that was peculiar but little did I know the flavor journey was just beginning. Next I tried the Bloody Maria, a cocktail that I had seen on their Instagram page. It was topped with a shaved ice that contained feta cheese and gherkins so I already knew it would be kind of weird. The bartender almost seemed to be dissuading me from ordering it and I could see why once I took a first sip. Intense fermented sourness combined with saltiness. I then took a sip of the thick liquid underneath the shaved ice. Lacto-fermented Mango and passionfruit nectar…also sour and quite unpleasant due to the burn and disharmony of horseradish and Worcestershire sauce. I admire creativity but that cocktail was undrinkable for me. We ordered a couple side dishes of Salmon Ceviche and Ikura ice cream. The ceviche was a bit over flavored with soy ginger glaze but decent tasting. The Ikura ice cream was bizarre. Aside from the prominent bright orange Ikura, there was a bed of shaved bonito flakes underneath the ice cream. My partner thought it was really good. She offered me a spoon of ice cream and bonito flakes. Sadly, that’s exactly what I tasted, not some transcendent flavor. For my 3rd and final drink of the evening, I tried the Penicillin Milkshake. It seemed like a safe bet. Lots of prep involved and they finished it off with a custom house-made whip cream and rainbow sprinkles. But the ginger was quite bitter and overpowered the cocktail, even with the creamy sweetness of the whip cream. I think if I had ordered slightly more conventional drinks like the Black Tomato that it would have been a better experience overall. But the two other follow-up cocktails were somewhat unpleasant as far as their resulting taste. I can see they are pushing the envelope but sometimes more balance and relatability is needed. Still, I would recommend Hybrid as a top cocktail bar in Saigon.
